Do What You Love and Work Becomes Play

What’s your dream job?

My dream job is one that allows me to live and work in harmony with my values, creativity, and heritage. It is not defined by titles or status, but by purpose, connection, and the ability to create something meaningful every day. At heart, my dream job is about storytelling through food, culture, and tradition.

At the moment, the focal point of this dream lives online through my website pancelticcuisine.com and the growing community around it. It is a space where I can share ideas, recipes, reflections, and conversations rooted in Celtic foodways and culture. Through this platform, I connect with people who value slow food, heritage, and meaningful connection, and it allows the vision to grow organically beyond borders.

Looking to the future, I dream of giving this work a physical home in the form of a pub, restaurant, or bistro. Not just a place to eat, but a place to gather. I imagine a warm, welcoming space where people can share good food made with care, sit around tables worn smooth by time, and feel truly at ease. A place where traditional and seasonal dishes are served alongside local produce, where music fills the room, stories are told, and conversation flows freely.

In this space, people would come not just to dine, but to belong. There would be nights of live music, shared meals, storytelling, and quiet moments of connection. It would be a modern hearth, rooted in ancient tradition, where culture is lived rather than performed.

Ultimately, my dream job is about creating spaces, both digital and physical, where people feel nourished, inspired, and connected. It is about keeping tradition alive while allowing it to evolve, and about building a community where food, music, and stories bring people together in a meaningful and lasting way.
